They are rich in the minerals iron, potassium, calcium, magnesium and phosphorus, as well as fibre, growth hormones, choline and enzymes.
Use: raw: in salads, on bread, for juicing, smoothies or to decorate your dishes, steamed as vegetables or stir-fried.
