The sprouts or greens of mung beans contain 60% carbohydrates , little fat, have a high content of essential amino acids , vitamins A, B1, B2, C, niacin, folic acid and especially vitamin E. They are rich in the minerals iron, Potassium, calcium, magnesium and phosphorus as well as fiber, growth hormones, choline and enzymes.
