Promise: Homemade Microgreen pesto is no comparison to that from the supermarket. We think it's a real poem paired with classic noodles!
Preparation time: approx. 20 minutes
Ingredients for 4 servings
- 350g pasta
- 1 pinch of salt
- 100 g pine nuts
- 2 cloves of garlic
- Rocket Microgreen to taste
- 1⁄2 lemon
- 1 pinch of salt and pepper
- 5 tbsp olive oil
- 300 g small tomatoes
preparation
- Cook the pasta in plenty of lightly salted water according to the package instructions until al dente, then drain and let it evaporate.
- Roast the pine nuts in a pan without fat until golden brown. Peel the garlic cloves, chop roughly. Cut off the rocket cress, puree with the lemon juice, garlic, pine nuts, salt, pepper and olive oil in a blender until a uniform cream is formed.
- Wash the tomatoes, halve them and mix everything together!
