How healthy are Microgreen? + Recipe tip for a cold

Recipe tip: Delicious pumpkin soup with basil or cressMicrogreen
Serves 4.
Preparation time: approx. 20 minutes.
Ingredients:
- 1 Hokkaido pumpkin
- 1 onion
- A portion of basil – or cress – Microgreen
- 750 ml broth
- 1 tub of crème fraîche
- 60 g fresh ginger root
- 1 tsp curry powder
- 1 tsp cumin
- 1/2 tsp salt
- pepper
- Optional:
- 1 small chili pepper, fresh
- 1 tbsp sugar
Preparation:
- First wash and cut the pumpkin into pieces, then remove the seeds and cut the rest into approximately 1.5 – 2 cm cubes.
- Peel and dice the onion, then sauté it in a pot. Add salt and the diced pumpkin.
- Pour in the broth and add grated or finely chopped fresh ginger. Then season with a slightly heaped teaspoon each of curry powder and cumin, freshly ground pepper, and salt. Optionally, you can also add a tablespoon of sugar and chili to taste.
- After about 20 to 25 minutes of cooking, the soup will thicken. If desired, the pumpkin pieces can be carefully pureed.
- Season with a cup of crème fraîche and finally sprinkle the delicious, fresh Microgreenon top.
