    Recipe tip: Delicious pumpkin soup with basil or cress Microgreen

    For 4 people
    Preparation time: approx. 20 minutes

    Ingredients:

    • 1 Hokkaido pumpkin
    • 1 onion
    • Portion of basil or cress Microgreen
    • 750 ml broth
    • 1 cup of crème fraîche
    • 60 g ginger root, fresh
    • 1 teaspoon curry powder
    • 1 tsp cumin
    • 1/2 tsp salt
    • pepper
    • Optional:
      • 1 small chili pepper(s), fresh
      • 1 tablespoon of sugar

    Preparation:

    1. First wash and cut the pumpkin, then remove the seeds and cut the rest into cubes about 1.5 - 2 cm in size.
    2. Peel and dice the onion and sauté in a pot. Then add salt and add the pumpkin cubes.
    3. Pour in the broth and add grated or finely chopped fresh ginger. Then refine with a slightly heaped teaspoon of curry powder & cumin, fresh pepper and salt. Optionally, you can also add a tablespoon of sugar and chili to taste.
    4. After cooking for about 20 to 25 minutes, the soup will become thick. If necessary, the pumpkin pieces can be carefully pureed.
    5. Season with a cup of crème fraîche and finally sprinkle the delicious, fresh Microgreen on top.
    6. Enjoy and at the same time support your immune system during the cold seasons.
