    Table of contents

    Buckwheat – The wheat alternative

Buckwheat is also known as a pseudocereal because it is not a grain and has nothing to do with wheat , but comes from the knotweed family. The shape of the fruits or buckwheat grains is reminiscent of beechnuts.

    Hulled buckwheat versus unhulled buckwheat

For everyday consumption and cooking of buckwheat, it is best to always use peeled buckwheat , as unpeeled buckwheat is indigestible due to its hard shell . By the way, it doesn't become soft even after cooking for a long time.

also best suited for growing sprouts. You can germinate shelled buckwheat between 1 and 3 days ; The result is a mild, nutty grain that can be used excellently in mueslis, smoothie bowls or as an accompaniment to hearty dishes.

Now what do we do with the unpeeled buckwheat ? Don't worry, we also have a very good use for it ;), namely for growing Microgreen !

    Quinoa – The Inca rice

Just like buckwheat, quinoa a gluten-free pseudograin . It belongs to the foxtail family and comes from the Andes . Quinoa was already a staple food for the Incas and they attributed magical powers to it.

Quinoa can also be germinated between 1 and 3 days and, with its nutty, aromatic taste, can be combined very well in a salad or as a side dish to main courses.

    Buckwheat Quinoa Germ Combo

You can germinate quinoa seeds together with the peeled buckwheat in a sprouting jar (don't worry, they get along quite well and the "forced" togetherness won't turn into arguments 😉). In this case you have an excellent basis for the buckwheat quinoa muesli or for a salad or a Buddha bowl.

Now let's move on from the bone-dry buckwheat quinoa theory to potte and show you how best to use the two new ones in a delicious breakfast recipe of a different kind 😋

    The recipe

    Ingredients for 2 people:

    2 days before:

Soak 150g of peeled buckwheat and 2 tablespoons of quinoa in a sprouting jar for 4 hours and then rinse and allow to germinate twice a day.

    Preparation:

    • Divide quinoa and buckwheat into two bowls.
    • Cut 1 apple into small pieces and cook lightly in a saucepan with a little water (approx. 1 tbsp) and cinnamon.
    • Puree 2 ripe bananas into a puree - we used a simple hand blender.
    • Peel the tangerine and cut into small pieces.
    • Divide all ingredients between the two bowls.
    • Decorate with raisins and nuts if desired.
